4 ingredient (healthy) vegan cookies

 

I don’t know if I can claim complete credit for these guys, but I don’t ever remember following a recipe for them. They came about when I wanted a sweet treat but didn’t want to just reach for a chocolate bar or spend ages baking. They only have 4, yes 4, ingredients so could be the easiest cookies you’ll ever make.

All you need is:

  • 2 very ripe bananas
  • 100g plain porridge oats
  • 2 or 4 squares of very dark chocolate (depending on how chocolatey you like it)
  • 30g of raisins (or other dried fruit of your choice)

 

You need to mash the bananas in a big bowl first, this is where the extra ripeness is essential – the softer they are the easier they are to mash up. These provides the ‘wetness’ from your more typical cookies. Then add your oats, depending on how big the bananas are you might need more oats, just add as much as you think you need. These two ingredients are you basic base, anything else you add can be up to you.

I tend to stick to raisins and dark chocolate. You don’t need a lot of this – I usually add 2 or 4 squares of the chopped chocolate and around 30g or raisins to add the sweetness.

Once mixed together I use a teaspoon to make similar size balls and pat them down when they are all laid out on the baking tray. They take around 10-12 mins in the oven on 200 degrees. Just keep an eye on them so they don’t burn.

I make these quite a lot. Not everyone likes an alternative type of biscuit, a vegan cookie at that,  but these don’t have refined sugars, eggs, flour, butter or even added syrup or Stevia and still taste pretty good, and you can’t say fairer than that.

Additional extras you can try include peanut or any type of nut butter (almond butter works especially well), desiccated coconut or even whole nuts if you don’t like raisins. Try them for yourself and see how easy they are!
