Homemade granola

If you frequent this site, you will know that I LOVE breakfast. Weekend breakfast is an official thing at our house. But having a delicious good breakfast on only a Saturday or a Sunday doesn’t satisfy my obsession. Unfortunately going to work, running our house and looking after a large dog alone during the week means there isn’t much time for kitchen mastery in the mornings Monday to Friday.

I solve this by making my own granola every couple of weeks which I can serve up in under a minute in the morning with yogurt and fruit or honey. Here’s how I make it…

You’ll need:
2 baking trays
Grease proof paper
300g Large rolled oats
Selection of seeds (I use sunflower and pumpkin and poppy)
Selection of nuts (I like flake almonds and pecan,  or walnut and hazelnut)
30ml Oil (I usually use something without a lot of flavour like vegetable or sunflower)
30ml Honey
100ml Maple Syrup
I also add a tsp of Vanilla extract
A couple of handfuls of dried fruit (just whatever you have in the cupboard is fine)

How to make:
1. Preheat oven to quite a low temperature 150C/ 130C Fan/ Gas 2.
2. Line baking trays with Grease proof paper
3. Mix all the wet ingredients in a large bowl

4. Measure out 300g large rolled oats
5. In this section I think you need to play with the recipe to find what you like but here’s how I do it
a. add to the oats 50g Sunflower seeds, 50g pumpkin seeds and around 3 tbsp poppy seeds
b. also add 75g flaked almonds and 50g pecans

6. Add all dry ingredients above to wet ingredients and mix
7. Pour mixture evenly onto both baking trays, it will be a thin layer
8. Put in oven for 15 mins. Keep an eye on them, if the top tray is browning quickly swap them around, I give them a bit of a mix half way through

9. After 15 mins add a handful of dried fruit to each tray and put back into oven for further 10 mins.
10. Take out and cool and then store in airtight container.

If its sealed properly, this homemade granola is good to eat for up to a month, but it never lasts that long in our house.
