I love Pinterest. I could easily spend hours pinning images of my dream home or planning my future wedding (it’s completely normal when you’re not engaged, I assure you). But aside from gazing longingly at the pictures, I very rarely do anything with the things that I pin. Until now.
Rather than just looking at the pretty pictures, I am going to start trying to recreate some of the amazing things that I see on there.
First up: Raw Vegan Lasagne.
This had been on my radar for a while but I never got round to actually trying to make it, thinking it would be more complicated that its worth. How wrong I was; this is one of the most simple and delicious recipes I have ever tried. I’ve made it 4 or 5 times since too, it is that good.
Above are the only ingredients you’ll need:
– 2 large courgettes
– Cashew nuts
– Sun-dried tomatoes
– Garlic
– Broccoli
You will also need a vegetable peeler, a chopping board and a food processor. No oven, no frying pan, no heat of any kind.
First up, you want to make ‘the meat’ which consists of the broccoli and sun-dried tomatoes. I don’t tend to follow a recipe for this really, but as a guide use roughly half the head of the broccoli, 4-5 tomatoes and a splash of the oil from the jar. Whizz that up until it mixes together.
Next up, you want to make the ‘cheese’ part, which is just the cashews and garlic mixed together. Again, I don’t tend to follow a strict recipe for this part, but I tend to use all of the 150g pack of cashews and around 5-6 smallish cloves of garlic. Obviously you can add more to this, depending on how garlicky you like your food!
Once you have both mixtures ready, you can make your ‘pasta’. This is made from thin slices of courgettes and nothing more and all you need is a vegetable peeler to create the perfect size slices for this. The middle parts of the courgette tend to be the widest so try and make those your perfect slices. Slice as many as you can and you can always use the left overs in a salad if you don’t need them all.
So now that all your ingredients are ready, you can set about creating your masterpiece! You can stick to just the ingredients I have mentioned above or add in some sliced, raw mushrooms or crunchy peppers, it’s totally up to you. This time, I just kept it simple and made little layers to enjoy it at its best.
