Spicy Eggs (in France)

It’s no secret that I love an egg, and a spicy one at that so I thought I’d share this latest HOT addition to my recipe scrap book! I cannot claim this recipe as my own, it was made for me by my friend Jim at his lovely holiday home (its the only reason I am friends with him*) in Normandy over New Year. Also I’d like to caveat at this stage that there isn’t anything particularly French about them, other than the fact that the eggs were bought and consumed in France with a bit of French bread on the side.  But I’m sure you’ll get over this little detail, when you try them.

Ok here’s how to make it, its super easy…

Ingredients:

2-3 eggs per person (depending on how hungry you are)
Spring onions chopped (I’d do about one for 2 people)
Chilli (how much can you handle?)
Diced Pancetta/Lardons (we used 70-80g packed per 2 people)
Parmesan

How you make it:

1. Fry the pancetta and put to one side

2. Chop chillies and spring onions

3. Whisk and season eggs

4. Cook eggs in the pan you used to cook the pancetta. The pan will not need any oil, stir regularly the same way you would if you made scrambled eggs.
5. Before the eggs are cooked add the spring onions and chillies and the pancetta. Keep stirring until cooked. We only added half the chilli at this stage, so that people could spice up their own eggs to their own tolerance levels.
6. Serve up and sprinkle with parmesan.

Because I have devoted my waistline to carbs, and because we were in France, we served it with rustic French bread. But you could have it without, or serve it for lunch with a side salad if you like.
